All the wines produced by Dailing Shuzo are brewed from Yamaguchi Prefecture's highest-grade "Benten Shui". The bottle body is designed by the Swedish design studio "Stockholm Design Lab", with the same black and white minimalist design. The brewery itself echoes this, and also abandons the traditional wine label designed with "calligraphy" inscriptions, and instead uses a very simple silhouette of "rice grains", using one to five grains of rice to distinguish between Junmai Daiginjo and Junmai Ginjo. Different types of sake, including sake, junmai sake, and non-standard sake!

This wine is a new version of 2-grain rice from Orei in 20/21. The rice polishing step has been increased from the previous 48% to an even better 40%. It is definitely a level of Junmai Daiginjo! It seems that Omine has a better grasp of the degree of grinding of sake rice. The rice contains fewer impurities during brewing, and the brewed sake has a richer fruity aroma. It has a sweet and mild aroma like green apple in the mouth. It is a top-grade sake that is suitable for savoring on its own. It is also suitable as a meal wine to accompany relatively light food such as sashimi, sushi, and white fish.
