Octomore 12.2 follows the previous legend of Sauternes. The now infamous Octomore 4.2 (Comus) became one of the most acclaimed and sought-after whiskeys in our distillery’s portfolio,
The combination of heavy peat smoke and Sauternes liqueur proved to be an incredible pairing.
This Octomore 12.2 will spend three and a half years in ex-American oak barrels, developing a solid foundation of fruity and floral spirit in our lakeside warehouse, before being refilled into impeccable premium Sauternes casks.
The key role of Sauternes barrels will add 18 months of supercharged fruit. Melon, white peach, honeysuckle and coconut add real flavor and sweetness that complement the peat smoke of this heavy phenolic malt.
Characteristics – Sauternes casks bring another dimension to Octomore’s dynamism. Honey-soaked fruit and dry smoke combine beautifully; the classic combination of smoky flavor and sweet fruit is perfectly presented once again.
Aroma - Beautiful aromas of melon, honey and smoked almonds. Toasted oak and earthy smoke are blocked by layers of fruit and honey. A combination of orange peel, peach, ripe melon, lemon and honey all wrapped in the sweetness of malty grains. Dry apple and pear drops follow, along with a wave of peat smoke and toasted oak, releasing earthy and resinous aromas.
Palate - Sweet, velvety and sweet, with fruit passing over the palate, lemon zest and vanilla pod stand out alongside melon and orange blossom. Another sip highlights the structure brought by the French oak, with caramel, baking spice and a dry finish with smoke and malty sweetness. Ripe fruit topped with syrup always speaks to the influence of Sauternes barrels.
Finish - On the finish, a salty lemon hit as the fruit and oak fade. That lovely peat smoke enters the process and leaves an imprint of Octomore DNA throughout the wine.
