Deanston specifically contracts with local Scottish barley farmers to directly source small quantities of high-quality, pure barley. Farmers do not need to use unnatural farming methods to increase yields, which not only reduces carbon emissions from long-distance transportation but also truly protects the land.
Handcrafted whisky, like haute couture, is produced in small quantities and of high quality.
Deanston remains true to 19th-century traditions, minimizing the intervention of computer instruments in each production process and returning the primary role of whisky making to the distiller. For example, the fermentation time is deliberately extended to 100 hours to reduce sugar content, which is longer than other whiskies. At the same time, the time the distilled gas spends in the still is extended to create a more delicate and smooth spirit for oak barrel aging. Coupled with storage in Scotland's tallest cellar, providing perfectly constant temperature and humidity conditions year-round, it allows the whisky to absorb the rich fruity flavors of Oloroso sherry casks. Every step of the process is personally supervised by the distilling team, and finally, their signature is affixed to the bottle label as certification.
Remarkably, in today's global trend of green, LOHAS, and sharing economy, Deanston was already at the forefront as early as 1785, utilizing the hydropower of the River Teith flowing past the distillery to build what was then Europe's largest waterwheel for power generation. Named after the Greek strongman Hercules, it not only supplied power to the distillery but also shared surplus electricity with surrounding communities. Even today, though the waterwheel has been replaced by a generator, the tradition of self-sufficiency and sharing continues.
Furthermore, the use of native Scottish barley reduces carbon emissions from transportation, aligning with the current global LOHAS culture's trend of returning to nature and reducing the burden on the land and the human body. This emphasizes local, seasonal, native ingredients, reducing chemical farming and carbon emissions, minimizing excessive cooking, and returning to the simple essence of things, striving to build a sustainable ecosystem for the next generation.

An innovative 10-year-old Scotch single malt from the Highlands. It is matured in casks that previously held red wine from the world-famous Bordeaux region of France. These oak casks impart a wonderfully delicate sweetness with notes of raisins, chocolate, and honey.
