Octomore 12.2 follows the previous Sauternes legend. Now the infamous Octomore 4.2 (Comus) is one of the most acclaimed and sought after whiskies in our distillery portfolio,
Proved that the heavy peat smoke is an incredible pairing with Sauternes liqueur.
This Octomore 12.2 will age for three and a half years in ex-American oak barrels, building a solid foundation for the fruity and floral spirit in our lakeside warehouse, before being refilled in impeccable premium Sauternes casks.
The key role of the Sauternes cask will add 18 months of supercharged fruit. Melon, white peach, honeysuckle and coconut add real flavor and sweetness that complement the peat smoke of this heavily phenolic malt.
Feature - Sauternes casks bring another dimension to Octomore's dynamism. Honey-infused fruit and dry smoke come together perfectly; the classic combination of smoky and sweet fruit is perfect again.
Aroma - Wonderful aromas of melon, honey and smoky almonds. Toasted oak and earthy smoke are blocked by layers of fruit and honey. The combination of orange peel, peaches, ripe melon, lemon and honey are all wrapped up in the sweetness of the malted grain. Dried apple and pear drops follow, accompanied by a wave of peat smoke and toasted oak, releasing aromas of earth and turpentine.
Palate - Sweet, soft and luscious, fruit swipes on the palate, lemon zest and vanilla pods stand out alongside melon and orange blossom. Another bite accentuates the structure brought by the French oak, with caramel, baking spice and dryness with smoky and malty sweetness. Ripe fruit drizzled with syrup always speaks to the influence of Sauternes barrels.
Finish - At the end, as the fruit and oak fade, a hint of salty lemon kicks in. That lovely peat smoke goes into the process and leaves an imprint of Octomore DNA throughout the wine.
