Since Ellen Island had more than 50 whisky distilleries in the early 19th century, the Ellen Distillery that was established here also has excellent technology and reputation for making wine.
Allen masters the excellent location of Island of Allen, the pure water source required for the whisky process, and the purification and filtration of granite and peat, plus the Shanghai breeze and the warm current of the Gulf of Mexico, bringing a mild climate and also contributing to it The rapid maturation of single malt whisky.
The fourth edition of the distillery's The Bothy Quarter Cask series was initially matured in first bourbon barrels and then transferred to American oak barrels for at least 18 months.
The purpose of this single malt whisky is to follow and use a quarter barrel specifically to brew the tradition of Isle of Allen whiskey. The aroma can provide an intoxicating vanilla spice flavor.
