【Not All Brandies Can Be Called Cognac】 There is a famous saying: "All Cognacs are brandies, but not all brandies are Cognac." Cognac is strictly regulated by the French AOC (Appellation d'Origine Contrôlée). Only grape brandies produced in the Cognac region of France, using specified grape varieties, twice distilled in traditional copper pot stills, and aged in French oak barrels, can legally bear the name "Cognac."

【The Cognac Grading System】 Cognac labels typically show V.S., V.S.O.P, or X.O, which represent the aging time of the "youngest eau de vie" in the blend:

  • V.S. (Very Special): The youngest spirit is aged for at least 2 years. Fresh and vibrant in style, suitable for cocktails.

  • V.S.O.P (Very Superior Old Pale): The youngest spirit is aged for at least 4 years. The complexity begins to develop, with distinct fruity and oak aromas.

  • X.O (Extra Old): Since 2018, the youngest spirit must be aged for at least 10 years (previously 6 years). The taste is exceptionally deep and smooth, a work of art perfected by time.

  • Extra / XXO: Represents even older vintages, with spirits typically aged for over 14 years or even decades.

【The Four Core Crus】 The terroir of the Cognac region determines the character of the spirit:

  1. Grande Champagne: The soil has the highest calcium content, producing the most refined spirits with excellent aging potential.

  2. Petite Champagne: Similar in flavor to Grande Champagne, but slightly less refined.

    • Note: "Fine Champagne" indicates a blend of these two crus, with Grande Champagne accounting for over 50%.

  3. Borderies: The smallest cru, known for its unique violet floral notes and round palate.

  4. Fins Bois / Bons Bois: Produces spirits with rich fruit aromas and a faster maturation rate.
