Oyama-cho, Hita City, Kyushu, is a remote village surrounded by mountains, about 80% of which is forest. Due to the limited terrain, it is not suitable for planting rice, but because of the long sunshine hours and mild climate, under the movement of one village, one product in the 1960s, plums were planted vigorously. The plums in Oyama are now called green diamonds, which shows their high quality.
おおやま Dream Workshop (Dashan Town Dream Workshop) is a well-known local plum wine merchant. It was founded in 1998. At first, it only dealt with agricultural products processing and mining tourism resources in Dashan Town. It was not until 2009 that the large-scale brewing equipment was officially set up. In just 10 years, Daisencho Yumekobo has rapidly grown into a frequent visitor to the major plum wine awards ceremonies. No wonder Kyushu JR took a stake in DreamWorks in 2013 and completely privatized it.
The "ゆめひびき" (Yumehibiki - literally translated as dream sound) introduced this time is brewed in such a unique environment. This wine is aged for 3 years with Yingsu plum, and then put into old whisky white oak barrels for 2-year bottling.
The effect of 5 years of painstaking efforts is indeed amazing. Once the bottle is opened, the fragrance of plums has filled the air. The wine is thick in the mouth, plump and mellow, and the 20% alcohol content makes the layers more changeable. Fragrant, good wine! No wonder the awards are so soft, the 2015 National Plum Wine Conference Gold Award, 2018 Silver Award...etc. I think the only thing that makes me feel bad is that the on rock is too tasty, and the ice cubes need to be prepared separately.
