The legendary Speyside distillery Mortlach has officially launched Release 01, the first expression in its annual limited edition "Neverbound Collection." This groundbreaking release introduces a new dimension of whisky flavor through innovative cask maturation techniques, embodying the brand's spirit of continuous exploration.
Pioneering New Cask Craftsmanship
Mortlach's Master Blender Dr. Craig Wilson personally journeyed to the Cognac region of France to select new French oak casks, naturally air-dried for four years, for the final finishing stage of the liquid. This not only marks Mortlach's first use of French oak casks for finishing but also precisely adjusts the wood tannins through extended air-drying, highlighting the umami depth in the spirit.
Founded in 1823, the Mortlach distillery is renowned for its unique "2.81 distillation process." The distillery utilizes six distinct stills, precisely interacting during distillation to create a complex spirit with a unique meaty richness, laying the foundation for this groundbreaking creation.
A Sensory Journey
Release 01 offers a captivating sensory experience: initial notes of red fruit and sweet cane sugar, followed by savory soy sauce and smoky meat fat, concluding with deep woody spice, presenting a superb balance of sweetness and rich flavors. Dr. Craig Wilson states, "This is a new exploration of whisky making. While preserving Mortlach's signature rich style, we precisely use cask techniques to highlight the umami in the liquid, delivering a thick, deep, and smooth mouthfeel."
Limited Release
Mortlach Neverbound Release 01 is bottled at 50.8% ABV, matured in refill American oak casks, and finished in French oak casks. This expression is now available at selected liquor retailers and counters across Hong Kong, with a suggested retail price of HKD 945.
